A Focaccia To Love


Moving season is upon us. Yes, Los Angeles has a moving season. Southern Californians do not like to move in cold weather- in other words, when the mercury dips below the 60º mark. 58 degrees? It's time for UGGs and cocoa and ordering in. Not for hoisting sofas up or down a flight of stairs. Are you crazy?

And yes. We are moving. Come June 1st or thereabouts we are joining the migrating, apartment swapping masses. We are weeding through the promises that bloom on Craigslist (a veritable bouquet of alluring superlatives). Amazing! Gorgeous! Light and bright! And the ever popular- HUGE! This whole searching (and so far, not finding) process inevitably makes me insanely hungry for bread. Not store bought bread. Freshly baked warm from the oven bread. The kind of rustic, crusty loaf that conjures the word hearth. And home.

Because when you're searching for a place to live, nothing whispers home to your soul like the yeasty sweet aroma of baking bread.

Thank you, Dear Readers for all your pre-Thanksgiving comment love. I'm paying attention. I am. In fact, I've had so many requests for a gluten-free pumpkin bread recipe that I'm sharing another baking success this week. Yup. Two goodies in one week. I usually balance my baking (sweet) and cooking (savory) posts a tad more fifty-fifty- especially when I am trying to lose those last five (stubborn!) pounds and all- but I couldn't ignore your requests for a Thanksgiving pumpkin bread, now could I?

See how I sacrifice for you, my Darlings? Developing, baking and taste testing Cinnamon Apple Muffins, Vegan Pumpkin Pie, Pumpkin Pecan Cookies, Pumpkin Raisin Cake, Pumpkin Waffles... Oy, the sacrifice. The pressure!

The 2008 Winter Holiday Frenzy has begun. Maybe for the sake of my sanity (now don't laugh about my alleged sanity, please) I'll put off trying to lose these last five pounds till 2009.

Gluten Free Banana Bread with Chocolate Chips

Score one for banana bread lovers. After more than a few banana-induced mishaps (who knew baking egg-free gluten-free casein-free banana breads would prove so harrowing and unappealingly gummy and well, just plain spirit crushing?) Steve and I produced a sweet and tender banana loaf worthy of a mention.

A shout of big thanks goes out to my buddy Clare from Massachusetts (you remember Clare- she generously shared her brownie recipe with me back in the day). Clare posted her banana bread recipe on the Celiac Listserv last week. I veganized Clare's ingredients to make this recipe egg-free and dairy-free. And then, well, I simply had to add chocolate chips. After all, chocolate is goddess food.

And what's a banana without a little chocolate?

Just another naked banana.

And when you have a partner/husband like Steve (who, by the way, as you would expect, has been a champ through my hip healing process- hefting laundry, dusting (yes, that's right, dusting), bringing me mugs of hot apple cider (with a cinnamon stick!) and just plain cooking up a storm on my famished behalf)- who sweetly asks, Would you like me to grill your slice of Banana Chocolate Chip Bread?--- you blush, Dear Reader, and realize (once again) you've married the right man.

The man who knows you like your chocolate dark and melty and warm on your tongue. For breakfast.

Go bananas on banana bread recipe

There are two things that come to mind when someone mentions banana bread; 1) Bananas and 2 bread. Bread has existed for centuries ever since the Neolithic period. Primitive men of crush grain with rocks and you mixed with water. Then, they spread the mixture on rocks on hot laid.

Bananas, was on the other hand, from Southeast Asia, probably the Malaysian region. Around 2,000 BC, spread it as far as India and Papua New Guinea. The banana has such significant impact in their culture that the entire structure is not wasted. The tribes are used as bridges; the leaves as a food packaging and banana heart (single male banana) are used for medical purposes. But not wheat was common at that time. Didnt so from there are banana bread.

The ancient Greeks were those who came up with the idea of banana bread. Although the banana in the region was not native, they were many references to the fruit. A most remarkable example is loose in the book Historia plantarum, translated as "The History of Plants", a Theophrastus, a Greek naturalist. The Greeks had a reputation for mixing bread with honey and other fruits. Why not bananas?

Modern banana bread was invented in the 1930s. It grew during the deployment of the baking soda quick bread popular. Sodium bicarbonate or baking powder, replacing yeast as a leavening agent and this was due to the fact that bread much faster takes quick rise yeast compared to use, takes the hours.

Experienced another upswing in popularity in the 1960s as home baking quickly to fad banana bread. Apart from the fact that several different variations was also invented by banana bread. Bakeries to produce nuts, chocolate chips and other fruit in the plain banana bread, greater diversity in their menu added. There is also a vegan version substituting the eggs with tofu or soy.

Spoon batter into the Pan and bake at 350 for about 50 minutes. Check whether it is cooked, poke a toothpick and when it comes to clean, it is done. Sprinkle brown sugar on top.

Bananas are an excellent choice of potassium. Help in cleaning the colon and the small intestine. Although their nutrients are easily reduced once cooked, is the price you have to pay to satisfy your palate.

Banana Bread

Today Im going to share with you our favorite banana bread! Give it a try...you will thank me later! ;)

Chocolate Chip Banana Bread:


1 stick butter

1 1/3 c sugar

2 eggs

1 tsp vanilla

1 c sour cream

2 c flour

1 tsp baking powder

1 tsp baking soda

3/4 tsp salt

1 c mashed bananas

1 c milk chocolate chips

1/2 c chopped pecans (optional - I left these out!)


Cream butter and sugar, add eggs, vanilla and sour cream. Mix flour, baking powder, baking soda, and salt in separate bowl. Slowly add to sugar mixture. Fold in bananas, nuts, and chocolate chips. Pour into 2 loaf pans or 2 muffin pans-or 1 of each. Bake at 325 for 1 hour in a loaf pan or 25 min in a muffin pan.











You can stop right here and this banana bread will already be amazingly delicous!! However if you want it to be even more fattening delicious add this topping:



1/4 c. melted butter

1/2 cup brown sugar

optional:

1/2 cup coconut

1/4 c chopped pecans

Mix ingredients together and sprinkle on bread. Put the oven on broil and put bread in for 1-2 min.

Chicken cheese bread sandwiches


Ingredients
  • French loaf 1
  • Mozzarella cheese ½ cup
  • Capsicum 1 strips
  • Onion 1 sliced
  • Chicken roasted and shredded 2 cups
  • Tomato 1 cubed finely
  • Mixed herbs 1 tsp
  • Cabbage sliced ½ cup
  • Mayonnaise 4 tbsp
  • Ketchup 2 to 3 tbsp
  • Mustard paste 1 tsp
Method
  • Cut long French loaf into 3 pieces, slit those 3 pieces from centre to make 6 pieces, in a bowl mix together roasted chicken, capsicum, onion, tomato, mixed herbs, ketchup, mix all well, mix cabbage with mayonnaise, butter your French loaf well, spread with filling, top with cabbage and mayonnaise, mustard paste, cheese, bake for 10 minutes until cheese melts, serve immediately.

Vegetable cheese stuffed bread bun recipe

We can play as we wish with the bread bun recipe, we can make stuffed buns that are vegetarian or non-vegetarian or desserts. Every one has their own version of making them. I had experimented with different kinds of recipes and came out with my own recipe which is perfect for making soft stuffed buns. These buns are perfect for break fast/lunch or dinner any time you will, i assure you that they will fill your stomach . I love self rising flour and its uses, I had already posted pan cakes and cake with self rising flour. It is very easy to use and yields very fruitful results.




Now coming to recipe
Ingredients:
Makes 8 medium size buns
Milk-1/4cup
Self rising flour-3cups(When measured with 160ml cup)
Salt-1/4tea spoon
Butter-1 cup(melted and measured with 160ml cup)
Egg-1+1 for wash (coat on surface of unbaked bun)
Dry active Yeast-1tbsp
Sugar-2tbsp
For Curry
Grated potato-1cup
Grated carrot-1cup
onions thinly sliced-1cup
green peas/batani-1/4cup
pepper powder-1/2tbsp
Salt to taste
Lemon juice 2tbsp
Others:
Vegetable oil--2tbsp
Mozzarella cheese


Directions:
For curry:
Heat 2tbsp of oil in a pan and add all the vegetables saute until they are well cooked under medium flame, them add pepper powder, salt and lemon juice. Mix well, cook for 2min more and turn off the stove.(you can fill the samosa stuffing, or sweet, or whatever you would like to but it should be dry. you can sprinkle little chat masala also for Indian taste)


For Bread: 
Add dry active yeast to the warm milk (the milk should be lukewarm i.e., when you insert your finger it should not hurt you), close with lid and keep aside for15min during which the yeast becomes active. Now take a bowl and add self rising flour, salt and sugar. Mix well. Break open egg in a separate bowl and whisk it. Now add melted butter and whisked egg to milk and add this mixture to dry ingredients mixture. Mix well. Take another bowl and dust it with flour. Take this dough into that bowl, cover with damp cloth and let it rise to double its volume atleast for 1hr.




Deflate the dough, and turn it out onto a lightly floured surface. Divide the dough into 8 equal parts, and form into round balls. Flatten each dough ball and add Mozzarella cheese and curry. Cover it as shown in figure. Place on lightly greased baking sheets at least 2 inches apart. Cover the rolls with a damp cloth, and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C)
Bake for 18 to 20 minutes in the oven, or until golden brown.

Burning Tree Fry Bread


4 cups flour
3 tbl powder milk
1 tbl baking powder
1 tsp Salt
1/4 cup oil
1 1/2 cups hot water
3 tbl blue corn meal; for bluecorn frybread onl

Mix first four ingreadients add the oil and hot water and knead slightly as for bisquit dough. Devide into 6 balls of dough, brush with oil and store in air tight container. Punch down the dough ball into flat pancake and cook in hot oil turning once to brown both sides.
