Seduced by Chocolate!

Its time for another Forever Nigella challenge over at maisoncupcake.com.

Now Nigella has many delicious chocolate creations in her cook books, but I didnt want to make a big cake or a pile of cookies because you know what would have happened...yes, I would have eaten them all.  So I thought Id see if I could find something that could be made on a fairly small scale, maybe a dessert that could be shared but not sitting there tempting me all week!

 
So here it is, Chocolate Rice Pudding

This recipe is in Nigellas Feast book but as I made some alterations by using double cream (it needed used up) and the white chocolate which was also left over from another recipe, so I can post the amended recipe.
Chocolate Rice Pudding (serves 2)
butter for greasing the pudding dishes
1 tablespoon of cocoa
1 tablespoon plus 1 teaspoon boiling water
100ml double cream
150ml milk
2 tablespoons pudding rice
50g good quality white chocolate, roughly chopped
1 tablespoon caster sugar

Preheat the oven to gas mark 2/150c.  Put the baking sheet in the oven to warm as it heats.  Grease two 150ml pudding bowls or ramekins.
Put the cocoa into a small measuring jug and dissolve with the boiling water then pour in the milk, stirring.  Divide between the buttered dishes.  Add 1 tablespoon of rice and divide the tablespoon of sugar between the dishes, stir.  Add the chopped chocolate and put them on the baking tray in the oven for 30-40 minutes.  Let stand for a while before serving.

It doesnt look particularly pretty when it comes out of the oven but it is really delicious, and not oversweet even with the white choc included.

Another dinner at the Kailyard by Nick Nairn

Here we are again, back in Nick Nairns Kailyard Restaurant on our second night of feasting.  We decided to forgo the bread so we could have a pudding each, definitely a good move!

I started with the Confit Scottish chicken terrine with baby leeks, crispy ham and pea vinaigrette.  The peashoot bit round the outside was lovely, but I found the terrine a little bit bland 7/10

Brian went for the shrimp cocktail, but they had run out of shrimps and offered crayfish instead, which he enjoyed very much 8/10


For my main I chose Slow braised neck of Dornoch Lamb, beetroot gratin, asparagus, carrot puree and basil gravy.  Oh my goodness, that was fantastic!  The lamb was meltingly delicious, the beetroot gratin was full of flavour, it was lots of very fine slices of stacked up, not sure with what, but whatever it was it was delicious.  This was a definite 9/10


Brian had Spiced confit duck leg, saute potatoes, cumin roasted carrots and celeriac, honey and sherry gravy.  This was also deemed to be a 9/10 dish.  We were both really pleased with our choices.


I finished my meal with this exquisite dessert, it looks pretty with its spun sugar topping but the flavour was quite outstanding.  This is a Spiced Pineapple Carpaccio with lime, chilli and anise sorbet and the flavours just burst onto your tongue, fantastic and for me, 10/10

Brian went for the warm chocolate pudding with nougatine parfait and berry fruits.  He enjoyed it but agreed that my dessert had more wow factor and gave it 8/10.

I hope you have enjoyed dining with us on our weekend away.  There are still a few pictures of Stirling Castle to post, but otherwise, breakfast on Sunday was pretty much a repeat of Saturday.  You dont have to vacate your room till 12.00 noon, so we also managed to have a lie by the pool reading the papers and then a final swim.  We are planning to go back in the autumn as we enjoyed it so much.

Celebrate the 4th of July by Having Your Flag and Eating it Too!

As the wise man once said, a video food blogger has to know his limitations. I had planned on doing a flag cake demo for the 4th of July, but since Ive never made one before, I decided to do some pre-shoot research.

I figured I would watch a few clips to see how others have approached the subject. Once convinced I could do a better, funnier job, I would head into the kitchen and roll camera.

Well, after seeing this concise, clear, and easy to follow flag cake video from my friends at Howcast, I decided to just post this instead. Being a true patriot means putting your country ahead of your own selfish interests… and Im kind of busy.

Anyway, have a happy and healthy 4th of July weekend, and (since I can’t say it at the end of the video) as always, enjoy!
